Danish Rye

This was a special request from a Danish colleague at work:
“Can you make a Rye bread that’s like the ones we eat in Denmark?”

Luckily I had received Jane Mason’s book All you knead is bread a few days before and lo and behold, there it was! I am happy to advise that the testing panel (i.e., the aforementioned Danish colleague), was immensely pleased with it: a sweet, chewy, seedy delicious loaf.
