Today was a busy day. I had a few requests for bagels, wholemeal rolls, tiger rolls and loaf and some hot cross buns. I also wanted to bake some sourdough for ourselves, using the Dutch oven on one of the loaves and baking without it for the other. The difference was abysmal:
The round loaf actually had just under 800g whilst the batard was close to 1 kg. Unfortunately baking the batard without a Dutch oven meant that the loaf crust solidified too early and the bread spent the rest of the bake trying to expand beyond its hard shell. The round loaf, on the other hand, came out beautiful, with a great shine, colour and spring. Definitely the way forward.
By the end of the day I calculate having made 49 different items. It was most definitely a table full!
