Peter Reinhart’s The Bread Baker’s Apprentice was one of the first bread books I bought and still one of my favourites – the way he explains the science behind bread is very clear and the recipes easy to follow (and delicious).
There’s also a Ted Talk by Reinhart that is quite fun and educative to watch.
This weekend I decided to revisit his Cinnamon Raisin bread, swirls of cinnamon sugar included. I skipped the walnuts called for as optional as I found the bread quite reach as it is and, besides, if you give me cinnamon and raisins I don’t need anything else!
Highly recommend for breakfast & afternoon tea.
