Granola loaf

A few weeks ago I bought a new brand of Granola that turned out to not be liked by any of us in the household.

To help it finish a lot quicker I started using it on a breakfast loaf, a light dough with milk, egg, a little butter and the aforementioned granola.

The bread was a hit and one I would suggest you give a go, with any granola/muesli you have in the house.

Formula

500g plain flour
10g yeast (2%)
10g salt (2%)
100g muesli/granola (20%)
25g butter (5%)
1 egg (11%)
290g full fat milk (58%)

Method

Mix all the ingredients and knead the dough for 10-15mins, until it passes the window-pane test.

Put in covered bowl and proof until doubled in size (1h aprox)

Remove the dough from the bowl and shape it as prefered. Leave to proof until well rise, some 45min.

Bake in hot oven at 230C for 10 mins.

Reduce the oven to 210C and bake for another 25-35mins (loaf should sound hollow and a probe inserted to the centre of the loaf should measure 98C).
